Vosges History
Vosges'
exotic truffles are made from the finest ingredients offered around
the world. Owner and Chocolatier, Katrina Mark off, personally
chooses every spice, flower and chocolate that is flown into our
Chicago kitchen. Mark off utilizes the original methods of French
confectionery artistry which she learned during her training at Le
Cordon Bleu in Paris. Having graduated with the Grand Diplôme from
Le Cordon Bleu and having worked extensively in France, Spain,
Italy, Southeast Asia and Australia her collections of haut-chocolats
have great, worldly inspirations. Inspired by her global
apprenticeships, Vosges truffles have exotic influences of an 'East
meets West' theme. The infusions of rare spices and flowers combined
with premium chocolate give a delicate balance of flavor, leaving
you with a layered and lingering sensation of spice and chocolate. A
true 'haut-chocolat' experience.

Red Fire Bar - $7 Mexican

Originally, cocoa beans were crushed and used with
vanilla, cornmeal and chillies in a frothed drink. When
Spanish conquistadors brought the seeds back to Spain,
new recipes were created by removing the spices and
adding sugar, and mainstream chocolate consumption was
born. Vosges takes chocolate back to its roots with the
Red Fire bar, blending dark chocolate with ancho and
chipotle chili peppers and Ceylon cinnamon.

Inhale warming ginger as menthol-nuanced wasabi cools.
Sense the evolution of flavors in the mouth. Commence
with ginger, followed by earthy cacao notes, mellow
wasabi reminiscent of coriander, finishing with black
sesame seeds, rich in nutty texture.

Aztec Elixir Cocoa - $22 Ancho
and Chipotle chillies + Mexican vanilla beans + Cinnamon
Discover the secrets of the Aztecs, the indigenous
people of Mexico, who indulged in revered potions of
crushed cacao beans, chillies, water and spices
believing the drink possessed aphrodisiac qualities.
Our version is infused with ancho and chipotle chillies,
Mexican vanilla beans, cinnamon and thickened with
organic maize powder {cornmeal}.
